Sarde a BeccaficoSicilian Stuffed Sardine Rolls
Sardines filled with breadcrumbs, pine nuts, raisins and anchovies are rolled and baked side by side, alternating with bay leaves. This beautiful dish, a pride of Palermo, evokes little beccafico birds pecking at fruit.

- Fine breadcrumbsToast in olive oil until golden beforehand.100 g

- Raisins soaked in water40 g
- Anchovy fillets in oilFinely chopped.4 fillets
- Flat-leaf parsleyFinely chopped.2 tablespoons
- Orange juice and grated peelUse a Japanese-grown unwaxed orange. The juice is poured over; grate only the colored zest, avoiding white pith, into the filling. Characteristic of Palermo.1 orange
- Bay leavesPlace between sardines for aroma and appearance.12 leaves
- Extra virgin olive oil80 ml
Method
Prepare herbs and orange zest
- 1 Finely chop 4 anchovy fillets.
- 2 Finely chop the flat-leaf parsley.
- 3 Grate only the colored outer orange zest.
- 4 Preheat the oven to 180°C.
Make the filling
- 1 Toast 100 g breadcrumbs in a frying pan with 2 tablespoons olive oil and cool when golden.
- 2 Mix with 40 g pine nuts, 40 g raisins, anchovies, parsley and grated orange zest to make the filling.
Ready when
Once the breadcrumbs are golden, cool and continue.
Roll the sardines
- 1 Spread the sardines skin-side down.
- 2 Add a little filling without overfilling and roll from tail toward head.
Arrange in the baking dish
- 1 Oil an oven dish with olive oil.
- 2 Arrange the sardine rolls side by side, seam-side down.
- 3 Insert 1 bay leaf between each.
Bake
- 1 Pour orange juice and olive oil over all.
- 2 Scatter over any remaining breadcrumbs.
- 3 Bake at 180°C for 18–20 minutes.

After 18–20 minutes, ready when colored and fragrant on top.
About this dish
Palermo’s kitchens hold a paradox born of ordinary people’s ingenuity. The beccafico is a Sicilian wild bird whose innards, fattened by eating figs, were prized by aristocrats: a luxury beyond ordinary reach.
People therefore tried recreating it with sardines they had. Enclosing a filling of breadcrumbs, pine nuts, raisins, sugar and orange zest in sardines and baking it could rival an aristocratic bird dish. This was the birth of sarde a beccafico.
The spirit of cucina povera, creating rich dishes from humble ingredients, lives here. Recorded in 19th-century cookbooks, it remains indispensable at Palermo’s holiday tables.
