Tabelia is a recipe service for cooking authentic Italian dishes in your own kitchen. Rather than trimming recipes for speed or convenience, we start from the ingredients and methods passed down where each dish comes from, then convert them into a form you can actually cook. Our motto is “For cooks who won’t compromise.” — a service for people who take the time to get a dish right.

What is the Authenticity Score?
The Authenticity Score is Tabelia’s own 0–100 measure of how closely a dish stays true to its original form. Cook the standard recipe exactly and the score is 100. Choose a substitution and the score drops according to its impact, with a clear explanation of what changes in flavour, texture and technique.
Swap guanciale for bacon in a carbonara, for instance, and you gain a smokier edge but lose the sweetness of guanciale’s rendered fat. Tabelia never rules out a substitution — it simply always tells you, in numbers and in words, what that choice changes.
