Method
Halve the peaches and prepare the filling ingredients
- 1 Preheat the oven to 180°C.
- 2 Halve 4 ripe peaches and remove their stones.
- 3 Crush 80 g amaretti.
- 4 Chop 30 g hazelnuts.
- 5 Cut 40 g butter into small pieces.
- 6 Continue when the peach cavities are large enough to hold the filling.
Make the filling
- 1 Mix the crushed amaretti, hazelnuts, 30 g sugar, 8 g unsweetened cocoa and half the butter.
Ready when
Continue when the mixture is moist and holds its shape when lightly pressed by hand.
Bake
- 1 Fill the peaches and arrange in an ovenproof dish.
- 2 Pour 60 ml white wine into the bottom of the dish and dot with the remaining butter.
- 3 Bake at 180°C for 25–30 minutes.
- 4 Ready when the peaches are soft and the filling is fragrant and browned on top.
