Method
Prepare the potatoes and onion
- 1 Peel 800 g potatoes and cut into 5 mm half-moons. Do not soak; simply wipe away surface moisture.
- 2 Thinly slice 1 onion.
Ready when
Continue when the potato surfaces feel dry.
Brown the potatoes
- 1 Heat 80 ml extra virgin olive oil in an iron or heavy frying pan over medium heat. Add potatoes and onion, sprinkle with 6 g salt and spread out.
Caution
Cook undisturbed; continue once the undersides are golden.
Cook covered, allowing them to stick
- 1 Cover and reduce to medium-low heat, turning large sections from the bottom with a spatula every 5 minutes.
- 2 Do not stir finely; leave broken pieces as they are and repeatedly let them stick to the pan before releasing them.
- 3 Continue once the potatoes are tender and mixed with fragrant browned crusts.
Finish
- 1 Uncover, raise the heat slightly and cook for 2–3 minutes to evaporate excess moisture.
- 2 Grind black pepper into the pan; the dish is ready when crisp crusts and soft, collapsing pieces mingle.
About this dish
Patate 'mpacchiuse is a potato dish long enjoyed across the Sila plateau in inland Calabria. Potatoes grown in these high-altitude fields are harvested in autumn and once played a central role in sustaining mountain households through winter.
Originally, shepherds and farmers prepared this modest dish in a single iron frying pan. Slowly browned in olive oil, it came to the table with the savory pieces stuck to the bottom, accompanying sausages and meat or making a meal by itself with bread.
Today it is a standard contorno in trattorias around Cosenza and appears at family Sunday meals. It conveys Calabria's mountain food culture through careful treatment of humble ingredients.
