Mozzarella in Carrozza
A Neapolitan fried antipasto of mozzarella sandwiched in bread, dipped in egg and milk and fried. Crisp outside with molten cheese within, it encloses the mozzarella as though it were “riding in a carriage.”

Ingredients (2 servings)
- Fior di latte mozzarellaSlice 1 cm thick and drain on paper towels200 g
- Sandwich breadTrim off the crusts4 pieces
- EggsBeat well2 pieces
- Milk50 ml
- All-purpose flourFor coating50 g
- Frying oil400 ml
Method
Drain the mozzarella
- 1 Slice the mozzarella 1 cm thick and drain on paper towels for 30 minutes.
Sandwich the mozzarella in bread
- 1 Trim the crusts from the bread and sandwich the mozzarella between the slices.
- 2 Press the edges firmly closed.
Coat and dip in the egg mixture
- 1 Mix the eggs and milk to make the egg mixture.
- 2 Coat the entire sandwich in flour, then dip it in the egg mixture.
Fry the sandwiches
- 1 Heat the frying oil to 170°C and add the sandwiches. Fry until richly golden on both sides, about 2–3 minutes per side.
Drain and serve hot
- 1 Drain on paper towels and serve immediately while hot.

The mozzarella should stretch into strings when properly finished.

Mozzarella in carrozza means “mozzarella in a carriage.” The name is said to come from the sight of precious mozzarella cheese riding in its bread “carriage” as it is fried. A classic Neapolitan street food, it is made at stalls and in homes alike. It also reflects the ingenuity of rural cooks finding a use for bread that had hardened since the day before.
The key to success is the moisture in the mozzarella. Unless it is thoroughly drained on paper towels before frying, it releases water during cooking and splits the coating. A variation adds a piece of anchovy inside, lending saltiness and savory depth for a more complex flavor.
