About this dish
On the volcanic plateaus of the Velay in south-central France, green lentils are grown in 87 communes at elevations of 600–1,200 m. Surrounding mountains block rain, and dry winds and sunshine cause water shortages in July and August. The lentils are said to dry early, develop thin skins, remain non-mealy when cooked and cook quickly as a result.
The local lentils first appeared in documents in 1643. A 1935 court ruling recognized the name green Puy lentils as a designation of origin. They gained AOC status in 1996, which the producers' organization describes as the first AOC for a legume.
These green lentils accompany petit salé, salted pork, and Morteau sausage.
