Ingredients (2 servings)
- Mackerel filletsRemove the central bones and keep the skin on.2 fillets
- PotatoesBoil in their skins.250 g
- Red onionThinly slice and soak in water.1 piece
- Green olives40 g
- LemonFor juice.1 piece
- Extra virgin olive oil40 ml
- Flat-leaf parsleyFinely chopped.4 sprigs
- Salta little
- Black peppera little
Method
Salt and sear the skin side
- 1 Salt the mackerel, leave for 10 minutes and pat dry with paper towels.
- 2 Heat a grill pan over high heat and cook skin-side down for 3 minutes.
Cook the other side and flake
- 1 Turn and cook the flesh side for 2 minutes.
- 2 Let cool, then flake into bite-sized pieces.
Boil and cube the potatoes
- 1 Boil the potatoes in their skins for 20 minutes, peel and cut into 2 cm cubes.
Soak the onion and chop parsley
- 1 Thinly slice the red onion, soak in water for 10 minutes and drain.
- 2 Finely chop the parsley.
Dress with lemon and oil
- 1 Combine the potatoes, red onion, green olives and mackerel in a bowl and dress with lemon juice, olive oil, salt and black pepper.
Scatter with parsley and plate
- 1 Scatter with parsley and arrange for serving.
