Prepare the shrimp and garlic

  • 1 Slit the shrimp along the back and remove the vein.
  • 2 Thinly slice the garlic.
  • 3 Finely chop the flat-leaf parsley.

Release the garlic and chili aromas

  • 1 Heat 50 ml olive oil in a frying pan over medium heat, add garlic and chili and cook until fragrant, 1 minute.

Sear both sides of the shrimp

  • 1 Add the shrimp and cook over high heat for 1–2 minutes on each side.

Reduce with wine and season

  • 1 Add white wine and cook off the alcohol for 30 seconds.

About this dish

Aglio, olio e peperoncino is famous as a pasta name, but the combination is also used throughout southern Italy for sautéing seafood. Sicilian fishers sautéed freshly landed shrimp with garlic and oil for breakfast or a light meal; this informality was the starting point of the seafood appetizer.
