Ingredients (2 servings)
- Chicken liversRemove the gallbladders completely and soak in cold water for 30 minutes to draw out blood.250 g

Method
Soak the chicken livers
- 1 Remove the gallbladders, the green sacs, from the chicken livers and soak in cold water for 30 minutes to draw out blood.
- 2 Drain and cut into bite-sized pieces.
Sauté the onion until golden
- 1 Melt the butter in a frying pan and sauté the finely chopped onion over medium heat until translucent, about 5 minutes.
Brown the livers
- 1 Drain the capers.
- 2 Add the chicken livers and sage and sauté over high heat for 2–3 minutes to brown the surfaces.
Simmer with white wine
- 1 Add the white wine and cook off the alcohol, then add the capers and simmer over low heat for 10 minutes.
Finish the liver paste
- 1 Season with salt and black pepper.
Ready when
Once the initial heat has dissipated, roughly mash with a fork into a paste; a texture that is not too smooth is preferable.
Assemble the crostini
- 1 Cut the baguette into 1 cm slices and toast, then top generously with liver paste and serve.
