Tuscan Roast Pork Loin

A pork roast beloved in Florence since 1439, its name said to come from Greek delegates at the council exclaiming “arista,” meaning “the best.” The key is packing a rosemary and garlic battuto into slits in the meat before roasting, for an astonishingly juicy result.

Ingredients (6 servings)

  • Bone-in or boneless pork loin roastBone-in is traditional, but a boneless whole piece may be used. Remove from the refrigerator and leave at room temperature for 1 hour1200 g
  • Fresh rosemaryStrip and finely chop the leaves from 2 sprigs for stuffing; reserve 2 sprigs for garnish4 sprigs
  • GarlicFinely chop 3 cloves for the battuto and thinly slice 2 cloves to insert into the meat5 cloves

Method

Make the battuto

  • 1 Finely chop the leaves from 2 rosemary sprigs and 3 garlic cloves.
  • 2 Chop the rosemary, garlic, salt and pepper together on a board to make a paste.
  • 3 Mix 2 tsp olive oil into the paste.
  • 4 Thinly slice 2 garlic cloves and set aside for inserting into the meat.

Stuff with battuto

  • 1 Use a narrow knife to make 6–8 deep slits in the pork.
  • 2 Pack the battuto, a finely chopped mixture of herbs or aromatic vegetables, firmly into the slits.
  • 3 Insert the slices from 2 garlic cloves into the slits as well.
  • 4 Rub battuto over the entire outside of the meat.

Sear the surface

  • 1 Heat 2 tbsp olive oil in a frying pan over high heat.
  • 2 Sear every side of the pork for 2–3 minutes per side.

Remove when the entire surface is a deep golden brown.

Roast

  • 1 Transfer to an ovenproof dish and add 200 ml white wine and the sage.
  • 2 Roast in an oven preheated to 190°C for 1 hour 15 minutes–1 hour 30 minutes.
  • 3 Baste with the meat juices during roasting.

Continue when the internal temperature reaches 63–65°C.

Rest and make the sauce

  • 1 Wrap in foil and rest for 10 minutes.
  • 2 Add a little white wine to the juices left in the ovenproof dish and reduce to make a sauce.
  • 3 Slice the rested pork.

Arista is a Tuscan pork roast centered on Florence. A story handed down through the generations tells how Greek clerics at the Council of Florence in 1439 tasted the roast and praised it as “arista,” the very best.

In Tuscany, pork, rosemary, garlic and white wine are a combination closely associated with farmhouse tables. A large joint roasted at harvest time or for Sunday lunch, then thickly sliced and shared by the family, has long been a familiar dish. Bread and beans alongside it create a table characteristic of Tuscany’s unpretentious substance.
