Ingredients (2 servings)
- Fresh anchoviesRemove heads and innards and butterfly; leave or remove the backbone as preferred500 g
- Fine breadcrumbs100 g
- GarlicFinely chopped2 cloves

- Lemon juice1 lemon, juiced
- Extra virgin olive oil60 ml
Method
Chop the garlic and parsley
- 1 Finely chop 2 cloves of garlic.
- 2 Finely chop the flat-leaf parsley.
- 3 Preheat the oven to 200°C.
Mix the breadcrumbs
- 1 Thoroughly combine 100 g breadcrumbs with the garlic and parsley.
Make the first layer
- 1 Oil a baking dish with olive oil.
- 2 Scatter a handful of the breadcrumb mixture over the base.
- 3 Arrange a single layer of anchovies, skin-side down.
Build the layers and drizzle with oil
- 1 Sprinkle the anchovy layer with the breadcrumb mixture.
- 2 Drizzle lemon juice and olive oil evenly over it.
- 3 Repeat the layers until all the anchovies are used, finishing with breadcrumbs on top.
Bake
- 1 Bake at 200°C for 15–18 minutes.
- 2 Cut into portions and serve hot.
