Method

Season the lamb

  • 1 Bring 6 bone-in lamb chops to room temperature.
  • 2 Chop the leaves from 2 rosemary sprigs.
  • 3 Crush 1 garlic clove.

Ready when

Rub the lamb with 35 ml extra virgin olive oil, the rosemary, garlic, 5 g salt and black pepper; proceed when the surface of the meat is moist.

Grill over high heat

  • 1 Heat a charcoal grill or grill pan thoroughly and arrange the bone-in lamb chops on it.
  • 2 Grill for 2–3 minutes on each side; remove when the surface is fragrantly browned and the center has the springiness of pale pink meat.

  • 1 Warm the plates and immediately arrange the freshly grilled bone-in lamb chops on them.

Agnello alla scottadito is grilled lamb long enjoyed at the tables of Rome and Lazio. In the season from spring to early summer when lamb dishes appear, it is served at family lunches and in trattorias.

The name means “finger-scorching” and conveys the eagerness of picking up freshly grilled meat to eat it. This distinctly Roman meat dish is enjoyed for its heat the moment it reaches the table, rather than being left to cool quietly on the plate.

It can still be found in trattorias and on home grills. Equally suited to Easter and weekend gatherings, it is a secondo that clearly expresses Lazio’s lamb culture.
