About this dish

Winters in Lombardy are bitterly cold, and cabbage has long been valued as a vegetable that sustains the table through the season. Verze stufate is a side dish from around Milan, made by braising Savoy cabbage with white wine and butter.

Winter vegetable sides are often eaten in this region alongside meat dishes such as cotechino or brasato, and dishes of beans or grains. The cabbage’s sweetness and tenderness bring balance beside fatty foods and rich stews.

Savoy cabbage remains an essential winter vegetable in Lombardy’s home cooking. Behind the glamour of Milanese cuisine, this side dish endures as a source of winter warmth made from a vegetable that keeps well.
