  • 1 Cut the pancetta into 5 mm dice.

  • 1 Very finely chop the onion.
  • 2 Thinly slice the garlic.
  • 3 Crush the canned whole tomatoes by hand beforehand.

Sauté the pancetta

  • 1 Heat 2 tablespoons extra virgin olive oil in a frying pan and sauté the pancetta over medium heat for 3–4 minutes.

  • 1 Add the onion and garlic and sauté over low heat for 5–6 minutes.

Add the vodka

  • 1 Add 80 ml vodka and boil over high heat for 2–3 minutes to evaporate the alcohol completely.

Reduce the tomatoes

  • 1 MeanwhileStart boiling a large pot of water (10 g salt per 1 L water).
  • 2 Add the crushed tomatoes and reduce over medium heat for 10–12 minutes, until moisture evaporates and the sauce concentrates.

In 1970s Italy, American cultural influence was at its height. The idea of adding vodka to pasta sauce is said to have arisen independently in Rome and Bologna at about the same time, and the debate over which came first continues.

Vodka contributes more than alcohol to the sauce. It has a chemical effect that softens tomato acidity while drawing out fat-soluble aromatic compounds in tomatoes. It has also been said to stabilize the emulsion with cream. Some food writers call it scientific pasta, but for many Italians, “we make it because it tastes good” is explanation enough.
