Method

Melt the chocolate over a water bath

  • 1 Finely chop 200g chocolate into a bowl and set over a pan of water at 50–60°C to melt. When completely melted, glossy and smooth, remove from the water and cool to body temperature.
  • 2 Separate 4 eggs into yolks and whites. Yolks in the whites prevent the meringue from whipping, so separate 1 egg at a time into a small bowl before transferring.

Mix the yolks into the chocolate

  • 1 Add the 4 yolks to the chocolate cooled to body temperature, 1 at a time, mixing well after each.

Ready when

Proceed when the mixture is glossy, smooth and creamy.

Caution

Hot chocolate cooks the yolks and makes the mixture grainy, so always cool to body temperature before adding them.

Whip the egg whites into meringue

  • 1 Make the meringue.
  • 2 In a separate clean bowl, whip the 4 egg whites with 1 pinch salt. Once white foam covers the mixture, continue whipping while adding 30g caster sugar in 2 additions.
  • 3 Stop before overwhipping makes it grainy.

Ready when

It is ready when lifting the whisk produces peaks with tips that bow slightly.

Fold the meringue into the chocolate

  • 1 Add 1/3 of the meringue to the chocolate and whisk firmly to loosen it; the bubbles in this portion can be sacrificed.
  • 2 Add the remaining meringue in 2 additions, using a spatula to fold broadly up from the bottom of the bowl. Stop as soon as no white streaks remain. Overmixing destroys the bubbles and makes a heavy mousse.

Chill to set

  • 1 Divide evenly among 4 dishes, cover with plastic wrap and refrigerate for 3 hours to set.
