Authentic Sicilian lemon granita with a crystalline texture, also served for summer breakfast. Traditionally, its crystals are formed by stirring with a fork, without a machine. In Sicily, it is eaten with brioche.

Ingredients (4 servings)

  • Fresh lemon juiceFrom 4–5 lemons200 ml

Method

Make the syrup

  • 1 Finely grate only the colored zest of 2 lemons.
  • 2 Put 400 ml water and 150 g sugar in a saucepan over medium heat, then turn off the heat once the sugar has dissolved completely.
  • 3 Add the grated zest of 2 lemons and leave for 10–15 minutes.

Ready when

Proceed when the sugar has dissolved completely and the lemon fragrance has infused.

Caution

Do not bring to a boil. Dissolving the sugar is sufficient.

Add the lemon juice and cool

  • 1 Strain the syrup through a strainer and cool to room temperature.
  • 2 Stir in 200 ml freshly squeezed lemon juice.
  • 3 Taste.

Ready when

Proceed when evenly mixed.

Caution

Freezing dulls the perceived sweetness, so adjust it to taste slightly sweeter than desired.

Pour into a container and freeze

  • 1 Pour into a shallow, wide tray with a capacity of 1–1.5 L.
  • 2 Place it flat in the freezer.

Ready when

Proceed once the mixture is in its container in the freezer.

Stir to form crystals

  • 1 After 30–40 minutes, remove from the freezer and stir the entire mixture thoroughly with a fork.
  • 2 Repeat this process 3–4 times, for a total of 2–2.5 hours.

Ready when

Allow 2–2.5 hours. Proceed when the crystals have an evenly crunchy, icy texture.

Caution

Without stirring, it will become a solid block of ice. Be sure to stir regularly.

  • 1 Return to the freezer until just before serving.
  • 2 Just before serving, spoon generously into chilled glasses.
  • 3 Serve with brioche.

About this dish

Summer mornings in Sicily begin with granita. In eastern Sicily, particularly Catania and Messina, the custom is to order brioche and granita together at a café or bar, dipping the brioche into the granita as you eat. This is as casual as drinking an iced coffee, yet it is a daily ritual.

The crunchy texture created by hand scraping cannot be reproduced by industrial machinery. Scraping with a fork in a home freezer creates ice crystals of irregular sizes, which melt at different rates in the mouth. This sensation of gradual collapse is the essence of granita.

Lemons are among Sicily’s proudest agricultural products. The Femminello variety from Syracuse has a particularly distinctive balance of fragrance and acidity, making a clear difference to the finished granita.
