  • CarrotsPeel and slice into 7 mm rounds600 g
  • Marsala wine100 ml
  • Butter40 g

Method

Prepare the carrots

  • 1 Peel 600 g carrots and cut into 7 mm thick rounds.
  • 2 Finely chop 2 sprigs flat-leaf parsley.
  • 3 Continue when the carrot slices are evenly thick.

Sauté in butter

  • 1 Melt 40 g butter in a frying pan over medium heat, add the carrots and sauté.

Continue when the butter coats all the carrots and the edges begin to look slightly translucent.

Cook off the alcohol from the Marsala

  • 1 Pour 100 ml Marsala into the frying pan and boil over medium heat for 2–3 minutes to drive off the alcohol.

Continue when the smell of alcohol around the pan disappears and a sweet aroma rises.

Braise gently

  • 1 Add 100 ml water and 4 g salt, cover and braise over low heat for 12–15 minutes.

Remove the lid when a skewer slides easily into the tender carrots.

Reduce and finish

  • 1 Remove the lid, raise the heat to medium and reduce the cooking liquid.
  • 2 When the liquid forms a glossy glaze coating the carrots, grind over black pepper and scatter with flat-leaf parsley to finish.

The port town of Marsala, at Sicily’s western tip, is known for its fortified wine. This wine spread around the world through British trade in the late 18th century and became rooted in island life not only as a drink but also as a kitchen seasoning.

Carrots braised in Marsala appear on family tables as an accompaniment to meat. The wine’s sweet aroma and the carrots’ natural sugars concentrate together, turning a humble root vegetable into a glossy dish.

Today it is a familiar contorno in trattorias around Italy as well as Sicily. Although carrots and Marsala are its only distinctive ingredients, it is loved for bringing a small sense of celebration to everyday meals.
