Method
Prepare the chocolate and dry ingredients
- 1 Finely chop 150 g dark chocolate.
- 2 In a separate bowl, thoroughly combine 80 g sugar, 40 g cornstarch and 1 g salt.

Continue when evenly mixed.
Warm the milk
- 1 Put 500 ml whole milk, 100 ml heavy cream and 3 ml vanilla extract in a small saucepan and warm over medium heat.
- 2 Remove from the heat when small bubbles appear around the edges.

Continue when the edges begin to bubble gently.

Do not boil.
Combine
- 1 Gradually add the warm milk to the sugar and cornstarch mixture in small amounts, whisking thoroughly.
- 2 Once all the milk is incorporated, return to the saucepan and place over medium heat.

Thicken and melt the chocolate
- 1 Heat over medium heat, whisking constantly. It will begin to thicken after 3–5 minutes; turn off the heat when large, rounded bubbles start to rise, at 82–85°C.
- 2 Add the 150 g chopped chocolate and 20 g butter and stir well until completely melted.

Continue when both the chocolate and butter have melted completely.

Stir constantly, as the bottom burns easily.
Pour into the molds
- 1 Divide evenly among 4 glasses or ramekins.
- 2 Press plastic wrap directly onto the surface.
- 3 Leave to cool.

Continue when no skin has formed and the containers are no longer hot.

A skin will form unless the plastic wrap touches the surface.
Chill until set
- 1 Refrigerate for at least 3 hours.

After at least 3 hours, continue when chilled through and set enough that the surface trembles slowly.
Dust with cocoa
- 1 Just before eating, sift 10 g unsweetened cocoa powder over the surface through a small sieve.
